🥜 What Is Njugu Karanga?

Njugu Karanga (Swahili for roasted peanuts) is a popular snack across Kenya and East Africa. Traditionally, the nuts are roasted dry or with minimal seasoning—but in this version, we go the extra mile with my personal blend of methods for added flavor, crunch, and that signature “bumpy” texture.

🔥 My 3 Secret Techniques

✅ 1. Salt Water Soak

Before anything else, I soak the raw peanuts in salted water. This step not only infuses flavor deep into the nuts but also preps them for an even roast.

✅ 2. The Strainer Trick

After soaking, I use a strainer to toss the nuts. This friction roughs up the skin, creating that beautifully bumpy and crispy texture you often see in expertly roasted peanuts.

✅ 3. Light Steaming

Here’s where the magic happens: a quick steam before roasting. This helps soften the skin just enough for a tender inside and a crunchy, golden outside.
